Hey Rob, BTW, welcome back to the forum, haven't heard from you in a while!
I believe what tgibsonhurricane is telling you is that you may be in luck and can still purchase the railings through a Hurricane dealer.
Hurricane keeps parts availability for about 10 years. It looks like the SS 201 upholstery/playpen layout changed in 2014 (more rounded design). So your model was still in production through 2013. Vintage AND classic!

Got some good news and not as good news. Since your model is still in production, Hurricane advised that the current model deck storage door (ski locker door) is still the same for your year. You can order it from any Hurricane dealer.
The baitwell door (hatch) has changed vendors over the years and the current model hatch does not match.
You have a couple of options.
1) You can try to see if a marine supplier, like Great Lakes Skipper (https://www.greatlakesskipper.com/) has a match as they buy up obsolete parts inventories of boat manufacturers. Make sure to look under both Hurricane and Godfrey boat names.
2) You can have one custom made by a marine fabricator. The really good news is it will be made from a superior marine grade material called King Starboard and it will outlive the rest of your boat. Here is a fabricator for consideration:

Regarding the electrical diagrams, I have sent you a personal message, just click on the envelope icon in the upper right of the screen.
I checked with Hurricane and they said they designed the instrument panel to accept up to a SImrad Go7 XSE. Just a word of caution, because something can physically "fit', doesn't mean it may not eventually stress the panel to introduce cracks into it over time. Below are the Go7 XSE dimensions:

Also, you may have your dealer put in a special request for an uncut instrument panel. Bear in mind this is probably a "custom/one off" request to Hurricane's vendor and may be a bit pricey, if they will do it at all. You might also consider contacting a panel fabricator, like AD&D Plastics (just type AD&D Plastics in the search bar of this forum and you will get the contact info) and get a quote from them if you decide to engage with the upgrade.
I don't have your model, so I can't really comment on your washdown, but I will share my experience. My boat uses the one Jabsco ParMAx 2.9 pump for all freshwater outlets, including the washdown. At first I was not happy with the force or distance of the water output using the spray head. Before changing/adding pumps, I decided to change the spray head to a jet nozzle with a shut off. That provided the water force and distance I was looking for with the washdown.

You may be able to do some internet searching (if you haven't already) and found someone that has one, Great Lakes Skipper often buys up obsolete boat manufacturers parts inventory. Just make sure you search both Hurricane and Godfrey and similar parts were used under both names.
The other source that I have heard nothing but good results from is from AD&D Plastics, they have made many older Hurricane helm panels.

Re: Fuel vent cap replacement/reattachment
Actually, I did some more research and it might be a unit from Gem Products. Gem supplied a number of fuel related components for Hurricane, including non-vented gas caps which are no longer used due to newer EPA standards regarding modified fuel vapor emission standards that came about in around 2013-14 (my 2012 SD237 has Gem based products on it). Gem decided to get out of that end of the business, however they still manufacture the vents (guard your Gem-based fuel cap as you can't get them anymore, it has a flip up tab attached to the middle of the cap!). The hole in the hull will tell if it is a Gem unit as it is different from the Whitehall model. I attached a spec sheet for the unit as well. They offer a straight hose fitting model as well.
