You post a good question, especially for older boat owners.
I will assume you contacted your local Hurricane dealer first and they were not able to get a replacement for you. This would be the easiest and probably the least expensive way to get one.
There are replacement windshield manufacturers/fabricators that can duplicate plastic boat windshields. I gave some a call to see what was entailed. Most indicated that they would need pictures of the old windshield e-mailed to them to get an idea if they are able to match the dimensions and contour and, if they can do it, give you an estimate of the cost. If you give the green light, they usually want the original one sent so they can be as accurate as possible fabricating the replacement.
Here's some contact info on the ones I talked to. There's more out there (maybe even located closer to where you live), this will at least get you going:

They sell Hurricane parts on Ebay and the last time there they had two different types of Hurricane windshields for sale. https://www.ebay.com/sch/i.html?_from=R40&_trksid=p2380057.m570.l1312&_nkw=hurricane+deck+boat+parts&_sacat=0
