CC 19 shallow water

Hello,
I am looking at the CC19 and the 211. Does anyone have any experience on how shallow of water they can run in? I live in South Texas and we have some skinny water and a shallow bay.
I am looking for a boat that I can fish, wakeboard/ski, tube and entertain with and these seem to be the best option.
Any input would be appreciated.

I can navigate in 2.5 to 3 feet of water slowly, motor trimmed up. GS211/Honda150. Need 4 feet to get up and go!
