Does anyone know where a side insert can be ordered for a 2005 GS211 center console Hurricane?

These can still be ordered through a local Hurricane dealer. The only difference is that they will be a brighter white but will still work. You can locate a dealer by placing your zip code in the dealer locator on www.hurricaneboats.com
